Flaky Baked Fish
6 fish fillets                                         1 medium lemon
salt and pepper to taste                      paprika
1 1/2 cups grated swiss or                 1/2 tablespoon dry mustard
       cheddar cheese                           1/2 pint whipping cream,
1/2 cup very fine dry bread                             unwhipped

Arrange fish in a single layer in a greased baking dish. Squeeze lemon and sprinkle one side of fillets with juice. Add salt, pepper, and paprika. Turn over and repeat. Sprinkle cheese on top. Mix cream and mustard, and pour over fillets. Sprinkle bread crumbs on top. Bake in 350 degree oven about 35 minutes until fish flakes easily.
