Baked White Bass
4 to 8 medium white bass fillets milk
2 tablespoons flour 2 cups grated cheese
1/2 teaspoon salt 2 cups grated onion
black pepper
Small whole white bass may be substituted for the medium size fillets. Wipe dry and place in foil-lined pan. Cover with cheese, onion, flour, and salt. Sprinkle black pepper over the cheese mixture. Toss lightly and spread it over the fish. Pour in just enough milk to cover bottom of the pan. This makes a sort of onion-cheese sauce. Bake 45 minutes at 350 degrees. Increase temperature to 375 degrees for 10 to 15 minutes.
